“Walking opens the mind,” say the poets. Sustainable tourism, researching the origins and genuine alpine experiences are the strengths of the Valle di Paznaun and the motto of the Culinary Walk of St. James 2012. From 8th July to 16th September, in addition to the landscape, you will be able to appreciate the pleasures of wine and food in this Tyrolese valley. Through four different tours departing from Ischgl, Galtür, Kappl and See, you can enjoy the best food in the region prepared with local products.
Thus, hikers, bikers and gourmets will find a charming mountain setting and dishes prepared by four internationally famous chefs in a traditional atmosphere. The formula is simple: each chef takes on the role of protector of a particular refuge and creates an exclusive dish for the summer menu, and each of the four different routes of the Culinary Way of St. James leads to one of the selected refuges.
This year, the team of great chefs consists of Stefano Ciotti (Vicolo Santa Lucia, Rimini, Italy) at the Heidelberger Hütte of Ischgl, Franky van der Haeghe (Hostellerie St. Nicolas, Elverdinge, Belgium) at the Ascherhütte refuge of See, Peter Gast (Restaurant ‘t Schulten Hues, Zutphen, Netherlands) at the Niederelbehütte of Kappl and Karlheinz Hauser (Seven Seas im “Süllberg”, Hamburg, Germany) at the Jamtalhütte refuge of Galtur. Under the patronage of the “chef of the century”, Eckart Witzigmann, the artists of the kitchen presented their specialties in the refuge “assigned” to them during the opening event on 8th July; the dishes – typical regional dishes from the various countries, but reinterpreted – will remain on the menu as a special highlight for the whole summer, promoted by the tourism board, which offers guided culinary tours, recipes to take home and tastings. The four gourmet excursions can be booked as part of hotel packages: accommodations for five nights and breakfast in a category of your choice, including four guided hikes to participating refuges, the necessary transfers at the summit and valley and, by taxi, starting from 257 euros per person.
